Our award-winning “Tru Blue” cheese is made with finest USDA Grade A Sheep Milk anywhere from Ewes that roam freely on our dairy farm here in Southern Oklahoma. Our milk, past the filtration stage is chilled to 37 degrees and held to a maximum of 72 hours (3 days), then pasteurized, reduced back to 93 degrees and processed for our cheese. From there, in a nearly month long process, it is cooled to 36 degrees F for aging. |
